rate codecs and at times, vicious compression, depending on signal
strength and other factors. Anything is going to sound like crap on

Most emphatically not. Asterisk is a SIP user agent, not a proxy.
You'd use something from the OpenSER/Kamailio/OpenSIPS family. Those
are actual proxies.
