In the end, here's what I found: wildcards do work, but spaces in
pathnames do not. Replace spaces with question marks, and all is
well. Use spaces, and it ignores the exclusions that contain them.
This is what works for me:

As just a small example, for any user with Firefox, all their
bookmarks are here. For any user with Thunderbird that's where their
mail is found. And these can be backed up even if those apps are open
at the time. Back up EVERYTHING you can, then choose what you want to
