what should i do so as to avoid phone firmware upgrade at the lab, i have
discovered that some times i unknowingly have a phone firmware upgrade from one
version to another.

or conversion. I believe this should be a basic skill a CCIE has. That
said I try to always do firmware updates on a CUCM instead of CUCME as they
seem to be more reliable and easier.

Nobody can guarantee that phones will be restored to a pre-decided firmware
version, while proctors definitely restore the lab to an almost blank
config; restoring the firmware requires some config and they just won't do
it for you. Just like CUE, it might be licensed for CME and your lab
