I use qmail. It's simple and easily configurable.

Doing exactly the same now. Sendmail + wu-imapd gives a pretty high
load. Probably due to both the mailbox format, and
Sendmail is no longer going to support the version we have in favor
of basically forcing everyone to upgrade to their new product.
