We haven't on any of our servers, due to the fact that 99% are shared
hosting and we can't do that. And with the 1% of servers that are not on
shared, these are intranet solutions that are under strict user virus
protection anyway.

Well... what exactly are you afraid of?
Your server being compromised by a virus? Users downloading an infected
file? Users uploading an infected file?
Mitigating those threats will need different approaches, and the
approaches will vary widely depending on your architecture and
just in case this has slipped under the radar
