 2 recipes Perfect Nut Crust



 CRANBERRY FILLING:



 2 env. unflavored gelatin

 6 c. fresh or dry-frozen cranberries

 2 c. sugar

 1 c. red currant jelly



 GARNISH:



 1 c. heavy cream, whipped



 Prepare the crust and using your fingers, press the dough firmly against
 the bottoms and sides of 3 inch tart pans so that it is about 1/8 inch
 thick. Chill

 the shells for 1 hour.



 Preheat the oven to 350 degrees. Put the shells on a baking sheet and bake

 until slightly golden and firm, about 12 to 15 minutes. Remove the baking
 sheet

 from the oven and set the tart pans on a rack to cool. Then carefully
 remove the shells from the pans.



 To prepare the filling, stir the gelatin into 1/2 cup cold water until
 dissolved. Wash and pick over the cranberries.



 In a saucepan, combine the cranberries with the sugar and jelly. Gently
 boil the mixture, uncovered, over moderate heat, stirring occasionally for

 15 minutes.

 Remove the pan from the heat. Cool the mixture slightly, and stir in the
 softened gelatin.



 When the mixture is cool, divide it evenly among the tart shells. Chill
 the tarts and serve topped with the whipped cream. This recipe will fill
 12 - 4

 1/2 inch tarts.  Enjoy.

[CnD] Strawberry Skillet Pancakes with recipe this time

Hi Everybody,

I made these for breakfast.

I didn't do the variations.
I followed the recipe but did not do it in a oven safe skillet used a 
round cake pan (think mine is 8 inches). They were wonderful. I almost 
forgot put in 1 cup of strawberries and 1/4 cup raspberries.

Ingredients
3 large eggs 3/4 cup whole milk 1/2 teaspoon vanilla extract 1/4 cup 
white sugar 1/4 teaspoon salt 1/2 cup all-purpose flour   2 tablespoons 
unsalted butter 1 cup sliced fresh strawberries

Directions
Preheat an oven to 425 degrees F (220 degrees C).
Place the eggs, milk, vanilla extract, sugar, salt, and flour into a 
blender. Pulse until no dry lumps remain in the batter. Melt the butter 
in an 8-inch, cast iron skillet over medium-high heat. Pour in the 
batter, and drop in the strawberries.
Place the skillet into the oven, and bake until puffed and golden, 20 
to 25 minutes. Remove from the oven and serve immediately.

Footnotes
Variations Cinnamon: add 1/2 teaspoon of cinnamon to the batter. Skip 
strawberries. Apple: slice 1/2 an apple and cook it on the melted 
butter until lightly golden. You may add a pinch of cinnamon to it. 
Skip strawberries. Blueberry: use 1/2 cup of blueberries instead of 
strawberries. Banana: add 1 sliced banana to the melted butter and cook 
it until golden, but still firm. You may add a pinch of cinnamon to it. 
Skip strawberries. Chocolate chip: add 1/2 cup of your favorite 
chocolate chip to the batter in the skillet. Skip strawberries. 
Chocolate: add 1 tablespoon of cocoa to the batter. Plain: skip 
strawberries and top baked pancake with a squeeze of lemon juice and 
powdered sugar.

[CnD] Potato Soup II for the Crockpot

I made this yesterday and it turned out really good!
I used a carton of Campbell's beef broth because I forgot to buy chicken 
broth

I used half and half,
and not whole milk.

Potato Soup II

6 potatoes

1/2 t garlic powder

2 medium onions, diced

2 carrots, thinly sliced

2 celery ribs, thinly sliced

2 can low-sodium fat-free chicken broth (14 1/2 oz)

1 t Italian seasoning

1 t salt

1/2 t pepper

1/4 c flour

1 1/2 c half-and-half or whole milk

Method

1. Peel and cut potatoes into 1/2-inch cubes.

2. Combine first 8 ingredients in a 4 1/2-quart slow cooker.

3. Cook, covered, at high for 3 hours or until vegetables are tender.

4. Stir together flour and milk; stir into soup.

5. Cover and cook 30 minutes or until thoroughly heated.

6. Makes 8 1/2 cups.

GERMAN OVEN PANCAKES WITH FRUIT SAUCE 

3 eggs
1/2 cup flour
1/2 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1/2 tsp. vanilla (optional)
4 strips bacon

Heat oven to 450°F.

Beat eggs thoroughly. Gradually add flour and salt, beating well. Stir in milk 
until batter is smooth. Stir in oil and vanilla (optional).

Pour into a buttered 10-inch skillet or 9x9x2-inch baking dish. Arrange bacon 
on top.

Bake in preheated oven for 20 minutes; reduce oven temperature to 350°F and 
bake 10 minutes longer.

Serve immediately with syrup or Prune-Raisin Sauce.

3 to 4 servings

Prune-Raisin Fruit Sauce:

2 cups water
10-15 pitted prunes
1/3 cup raisins
1/2 to 1 tsp. cornstarch
1 tsp. cinnamon
1/2 tsp. freshly grated nutmeg
1 tbsp. sugar
pinch of salt

In a saucepan, bring water to a boil. Add prunes and raisins. Reduce heat to a 
simmer and continue to cook for about 25 minutes. Thick with 1/2 tsp. cornstarch
mixed with a few drops of water until smooth. Add spices, sugar and salt. If 
too thick, thin with a little rum or water, if desired. If too thin, cook
a bit longer. Serve over pancakes.

May be stored in refrigerator for 1-2 weeks; pour boiling syrup into hot jar 
and refrigerate when cool. Makes about 2 1/2 cups.  Enjoy.

Hi, I have a similar recipe.  It calls for browning the pork chops on 
moderate heat five minutes per side, putting on top of the rice, etc, 
covering, and cooking at 350 for a half hour.

This sounds so good but I don't have a crock pot.
If cooked in the oven, at what temperature and for how long, please.
Is anyone able to provide a rule of thumb list of crock pot to oven 
equivalents for time and temperature?
I often receive great recipes for the crock pot and wonder how to do them 
in the oven.

[CnD] Talking microwaves?

Well, the world's oldest microwave is on its last legs.  I have had this
microwave for 27 years this month!  I guess it is time to bite the bullet
and venture out and purchase a new one?

So, can you all give me advice and information about the talking microwave
that I have seen mentioned here in the past?
