The dependencies currently have mysql-server as a recommends only, so
you can avoid installing it by using --no-install-recommends. the same
would hold for dovecot-*
There is however a dependency on mysql-client which would prevent one
from using mariadb-client (and would cause a conflict with
Package: postfixadmin

Dear Maintainer,
Please add MariaDB as an alternative for Mysql/Postgresgl. MariaDB is
compatible with MySQL. Or better: make the database a recommendation, it can be
on another server I
expect.
