J'avais le même problème sur Stretch, il y avait une version antérieure
du module "Français Language Pack" installée et non compatible.
Pour résoudre le problème tu peux essayer d'aller supprimer les modules
incompatibles et activer la version compatible de "Français Language
Pack" en

effacer (ou plutôt déplacer) ton ~/.thunderbird ou ~/.icedove et tenter
de lancer Thunderbird voir si l'interface, ne serait-ce que la première,
