pseudo-packages like internet-superserver or maybe tcp-superserver and
udp-superserver (for things like couriertcpd or tcpserver that only provide
tcp superserver)

the problem may be caused by snd. when you listen to source .wav file, does
it sound OK? If you listen to the stream, does it sound OK?

ital requires drive that supports digital audio extraction (grabbing),
transfers audio through bus (ide,pci/isa) and you tune sound with "PCM" bar.
Maybe you don't have the sound cable, and after upgrade your players
switched from digital to analog audio extraction, thus you don't hea
sk instead of NFS.
try to umount /mnt/nfs and look to the directory after.
