postfix: what's local?

I just installed postfix (debian unstable, kernel 2.2.17, dial-up system) and I don't understand what should I use as domain and local destinations. as typical dial-up system I am not connected 24/7 (but close:-) and I have no name (ISP gives me some name but that changes everytime I connect
