To update, this basic issue is affecting multiple apps: gedit, document
viewer, and even nautilus, so it would appear to be an issue with Gnome.
I haven't had a chance yet to check bugs/issues there, but wanted to
update this report while I did so.

When maximizing a manually-sized gedit window, the entire text part of
the window goes pure white, and text cannot be edited. Un-maximizing
restores the window, and minimizing is unaffected, but this may
nonetheless be related to bug #720918.
