Pushed a one-line solution that simply changes the requested icon in the distro-added 'nautilus-home.desktop', that is subsequently sourced by Unity. In the middle of debugging this, I also encountered a weird case where the Launcher entry for 'nautilus-home' was dropped from the static list of Launcher entries.
