The software responsible for the removal of other packages is APT, not
evolution.
If it is not being removed that's because either another package still
recomends/depends on it or because it comes flagged as manually installed in
the standard Ubuntu CD.
In neither case the problem
As far as I can remember, when I had this issue I was using ext4, and no dual
boot.
Also, as far as I can remember, I got rid of this issue by creating a new user
account.
It could be related to the files inside the user's home folder.
It's just a guess, but worth trying:

Still there is something that could easily be improved:
When I select a filesystem mounted on the top of a luks-mapped device, since
the device name is like 10 times bigger than /dev/sdc2, it makes the second
column far too wide.
On y eeepc 900 with 1024x600 evolution is my favourite and only email
reader. It is certainly not unusable.

Why is it invalid for sun-java and other java packages?
I know many packages who change mime icons when installed.

Maybe it is in gnome-session+.compiz?
So you can try
mv .compiz backup ; rm -rf .config/gnome-session
from a terminal session, whithout any desktop session open.

I don't agree that this have low importance. It's about sensitive data
leak due to official Ubuntu software misbehavior.
