A fix has been merged upstream two months ago, see https://gitlab.gnome.org/GNOME/gnome-shell/-/issues/4184 and https://gitlab.gnome.org/GNOME/mutter/-/merge_requests/2027 The fix was released with version 40.6, but Debian and Ubuntu haven't updated the upstream package in their repository, yet.

Had a bit of time today to play around with other kernel versions. The "update" that was done was just a patch (5.8.0-40 -> 5.8.0-41). I've tried reverting to the first and also installed the 5.4 kernel you suggested but both did have the same issue. Looks like the system is mostly okay as long as
