If there were any "crashes" then indeed using a Xorg session you would not notice them, because gnome-shell on Xorg can restart seamlessly and your apps are unaffected. That doesn't mean Wayland is crashing more often than Xorg, only that a Xorg session recovers better from gnome- shell crashes.
