I've been using SqueezePad with the playback function since November and
find it extremely useful.
When I'm listening on the iPad I often use Splashtop Remote Desktop to
connect to my PC. Once connected, the playback quietens then

How do you want it to work? For example, you could try to install
Squeezebox Server on it, so that you could it as your server instead of
your pc. Or, you could just keep your music library on the NAS, run SBS
on a pc, and have the pc access the library on the NAS.

You could access it from a computer, but without Squeezebox Server you
wouldn't be able to play the music through a Squeezebox.

I have a SB3 with 7.5.2. While playing internet radio stations, the CPU
on the SB server will eventually get pegged at 100%, and the SB3 will
lose connection. This never occurs with music or podcasts from my own
library. It can take 20-30 min. to regain control of the server once

What format is the audio stream being played ?
Have you changed default settings ?
What process is taking bulk of CPU time according to Task Manager ?
For WMA and MP3 stream - they will be played directly by SB3 and will
have no load on the SBS server.
For other stream
Have you tried updating to 7.5.4?
That sounds like IO starvation more than anything.
