You should be doing practice DR's. Grab a PC and do them. This gives you the
chance to see how long a restore would take, how to do one, and to make sure
the data on the tapes is good.

Do a couple of disaster recovery drills, and then you'll know how long it
takes to recover servers in your environment. Hardware, software,
configuration, and operator skills are going to vary from shop to shop, and
so recovery times are going to vary as well.
