Thank you for the comments. So far everything has gone ok, I fixed all
the fields with ASCII charset at the FB 2.54 DB (changed
we do migration for our clients, we use our automation tools which
ensure that we have traced all problematic queries before going to
production.
I don't think it's possible to do such checking manually in case of big
enough system - and comments in this thread confirm it.

that cache is bad, just highlights the potential risk

Nevertheless, I'll try on a physical machine as you and Carlos suggest

nbackup to lock database before VM snapshot, in this case
only delta will be at risk.
However, nbackup-only solution is not smart, since it does check an
integrity of database, as gbak does.
We recommend to use combination of nbackup and gbak.

Probably you mean Lock conflict, not a true deadlock (full error text
will help).
If you see transaction number in the message, you can track it using
MON$ tables, and then find out which connection has started it.
