Modern professional printer drivers know how to paginate booklets (or
"signatures"), thus there isn't much sense in doing it in software
unless you are printing at home.

plug-ins from Quite Software. I've been using them for a number of years

the file to PDF. Then use pre-press tools such as Quite Imposing
(there are many others that do the same thing) to set up the
imposition pattern. Note that it is a pre-press tool.
