I am very happy with BookVars. When I go to create a new folder for a
book/part of a book, the first thing I do is create the book file. The
*second* thing I do is create the BookVars file.

maybe a tip for "variable naming conventions": use a number as a prefix in
your variable name. None of the system variables start with a number.
Therefore, I name my variables as follows:
1-productname01
1-productname02
2-companyname01
2-companyname02
3-docname01
4-doctype01
5-version

You don't need to create a new variable and replace the old. You can
just edit the name.

your variable definition sets the formatting.

* Find an instance of the old variable.
* Replace by pasting.
If this works, open all files in the book, save all files in the
book, then Find/Replace across the book. Check

You can export the files to MIF and process them with Perl or some
scripting or regex application.
You might check out BookVars, which is specifically designed to manage
variables at the book level .. add, delete, rename, change (new "replace"
functionality coming out soon).
