I realize this response is a couple of weeks late, but a good place to start
is to download the Adobe FrameMaker 10 User Guide at:

It's currently 573 pages and was last updated on 11/23/2011.

While not as glitzy as the hardcopy manuals that used to come bundled with
the FrameMaker, it will tell you an awful lot about the features of this
release, including a nice section on structured authoring and another
section on DITA authoring (both too brief).

It is not written as a tutorial, but as a description of what the software
can do. There are, however, some brief tutorials embedded within the
description. Attentive reading of this document will give you a great deal
of insight into how FrameMaker works.

I'm not sure why this FM10 version is not posted at:

erguides
where a number of the previous user guides are available. (This is the link
you are taken to if you click on the User Guide link listed just under
RESOURCES on the FM splash screen when you start up the software.) Perhaps
somebody at Adobe will read this and make that happen (along with posting
the other FM 10 related PDFs that are available, but not yet posted at this
link).

I always recommend Scriptorium.com's FM8 Reference work - its functionality is 
the same as FM10 (just the screens are outdated)

I would say:

1. If you are trying to learn FrameMaker, then I strongly recommend the 
Scriptorium  book on Unstructured FrameMaker 8 ... it also applies to version 
10 (although the look and feel GUI described is different).

2. If you are familiar with FrameMaker and simply trying to learn the new 
version 10 GUI, then I don't know of a book for that.

Separately, I wish that Sciptorium had not canceled their plans for releasing a 
Structured FrameMaker 8 book (Hint! Hint!) - maybe they can do a Structured 
FrameMaker 10 book instead?
