Banana Split Pie
Ingredients:
1 can Eagle Brand Condensed Milk
12 oz. Cool Whip, thawed
1 (15 oz.) can crushed pineapple, drained well
1 lg jar Maraschino cherries, drained 4 bananas, sliced and dipped in
lemon-lime soda (to deter browning)
6-8 strawberries, sliced
Chopped nuts (optional) 2 graham cracker pie shells
Method
Fold Eagle brand milk and Cool Whip together until smooth and creamy. Fold in
other ingredients until well blended and fruit is mixed throughout. Place
mixture into pie shells and place in freezer until set. (Will take about 1 1/2
hours to freeze firm.) Slice and serve. Makes 2 pies. Can also be made into
individual tarts.

Notes: This originally was served in our family as a fruit salad, but we
discovered it made a wonderful ice cream pie and it is now a favorite.
Number of servings: 12-14

Free Recipes Deep-Dish Cherry Pie

2008-02-20 Thread luvmygroops
From the MyRecipes.com website...

~

Deep-Dish Cherry Pie

Cherry pies are traditionally made with sour cherries. Since their availability
is limited, we used a combination of Bing cherries and dried sour cherries to
lend tart flavor.
Ingredients
 Crust:
1 cup all-purpose flour, divided
3 tablespoons ice water
2 tablespoons sugar
1/8 teaspoon salt
1/4 cup vegetable shortening

Filling:
3 tablespoons cornstarch
1 tablespoon sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground allspice
4 cups pitted sweet cherries (about 1 1/2 pounds)
1 cup dried sour cherries
2 tablespoons fresh lemon juice
 Cooking spray

Topping:
1 tablespoon water
1 large egg white
2 teaspoons sugar
1/4 teaspoon ground ginger

Preparation
Preheat oven to 425°. To prepare crust, lightly spoon flour into a dry
measuring cup; level with a knife. Combine 1/4 cup flour and ice water,
stirring with a whisk until well blended to form a slurry. Combine 3/4 cup
flour, 2 tablespoons sugar, and 1/8 teaspoon salt; cut in shortening with a
pastry blender or 2 knives until mixture resembles coarse meal.. Add slurry;
toss with a fork until moist. Press gently into a 4-inch circle on 2
overlapping sheets of heavy-duty plastic wrap; cover with 2 additional
overlapping sheets of plastic wrap. Roll dough, still covered, into an 11-inch
circle; chill. To prepare filling, combine cornstarch and next 4 ingredients
(cornstarch through allspice) in a large bowl. Stir in the fresh cherries,
dried cherries, and lemon juice; toss well to combine. Spoon filling into a
10-inch pie plate coated with cooking spray. Remove top sheets of plastic wrap
from dough; place on top of cherry mixture, plastic wrap side up.
Remove remaining plastic wrap. Fold edges of dough under; flute. Cut 6
(1-inch) slits into top of dough using a sharp knife. To prepare topping,
combine 1 tablespoon water and egg white, stirring with a whisk; brush top and
edges of dough with egg mixture. Combine 2 teaspoons sugar and ginger; sprinkle
over dough. Place pie on a baking sheet. Bake at 425° 40 minutes or until
golden. Cool completely on a wire rack.
Yield
9 servings

2 Egg yolks, beaten
1 tablespoon of cider vinegar
1/4 teaspoon of salt
Few grains cayenne pepper
1/2 teaspoon of Dry mustard
17 ounce can of asparagus spears, drained
4 English muffins, split and toasted conventionally

Microwave Oven 1 to 2 minutes or until heated through. Arrange toasted English

Free Recipes Italian Baked Eggs

2008-02-20 Thread luvmygroops
From the Basic-Recipes.com website...

~

Italian Baked Eggs

1 small zucchini, halved lengthwise and thinly sliced
1/2 cup chopped red onion
1/2 cup chopped red or green sweet pepper
2 cloves garlic, minced
2 teaspoons olive oil or cooking oil
6 egg whites
1 egg
1 cup fat-free milk
1 tablespoon shredded fresh basil
1/4 cup shredded mozzarella cheese (1 ounce)
Chopped tomato (optional)

In a medium skillet cook zucchini, onion, sweet pepper, and garlic in hot oil
until onion is tender. Set aside. In a medium bowl stir together the egg
whites, egg, milk, and basil. Stir in zucchini mixture. Pour into 4 individual
quiche dishes or shallow casseroles, about 4-1/2 inches in diameter. Bake in a
350ºF. oven for 15 to 20 minutes or until set. Sprinkle each serving with
mozzarella cheese. Let stand for 5 minutes before serving. If desired, sprinkle
with chopped tomato. Makes 4 servings.

Garlic Storage Tip: Keep garlic on hand for adding a boost of flavor to many
recipes--without adding fat or calories. Store fresh garlic in a cool, dry,
dark place. Leave the bulb whole, as individual cloves dry out quickly. Minced
garlic is available in easy-to-use jars and will keep in the refrigerator for
up to 6 months.
