I just tested the UI "unsharing" for both of your cases and was unable
to replicate the problem. Can you confirm that you are using the public
Main Galaxy instance at http://usegalaxy.org ? And is this your account
email? Please confirm and we can try to see what may be going on.

I am trying to clean out my "Histories shared with you by others" page on the
main public Galaxy server. I would like to remove old histories shared with
me. I have tried two methods, neither of which allow me to remove these
histories:
