Yes, in my opinion the wiki page should hold the build instructions of
the current git version. As you already mentioned, the older versions
are coming with build instructions in INSTALL.txt.

with your info + some searching i found out that 2 packages where missing :
*qt5-default *
*libqt5xmlpatterns5-dev *
(well actually more than just 2 packages, but by installing these 2 all
other necessary packages were also installed automatically)

your Qt5 installation should provide Qt5WidgetsConfig.cmake.
on my box :
jeyzu@bigdaddy: ~ $ pacman -Qo $(locate Qt5WidgetsConfig.cmake | head -n1)
/usr/lib/cmake/Qt5Widgets/Qt5WidgetsConfig.cmake is owned by qt5-base 5.7.0-3
