POP normally doesn't support creating folders.

Assuming an IMAP account, login to that account from a desktop mail
client that supports folder creation and create the folder. Then go to
K-9 and refresh the folder list.

Are you using IMAP or POP3?

K-9 does not have the ability to create mail folders (IIRC). You have to 
create the folders on a desktop client (or other client) and then you can move 
e-mails into those folders. There is an archive option but I don't know if you 
automatically have an archive folder or not.
