Ok, so I got this to work after followed some of the other instructions on
this thread.
Specifically, I needed to reinstall the fonts on Windows using right click
> install for all users
Then cleared the .lilypond-fonts... directory
Then run lilypond again, and that worked.

I'm pretty sure text fonts on Windows are kaput. Some work, some don't.
The fonts I'd like to use show up as installed properly in Settings and
work in all other apps I've tried, but not Lilypond. I'm on Windows 11,
but I've also tried on Windows 10.

It is an option when you right-click to install a font. Look for
"Install for all users" which should have the elevation shield next to
