I changed my screen font to
\screen_font_roman -*-new century schoolbook
and found that I had to use quotes, as in
\screen_font_roman "-*-new century schoolbook"
otherwise when I started LyX the screen font would be simply "new"
(which isn't what I wanted). With the quotes,
