However as I said, the microphone is a mono source.
So you have your voice on one mono track, your music on another stereo track
etc. Then you want to mix those tracks together for the end result.

Since you are recording a mic source, you need to set this to mono.
You set this to stereo only if you are recording music or other stereo source

So we have two types of tracks. A mono track and a stereo track.
What distinguishes a mono from a stereo track is how many channels is using.
When stereo you use 2 channels. So if you have an audio interface connected you
will be using channels 1 and 2 to record in stereo.

I'm finishing up a project in amadeus Pro in which I have 3 separate
files/documents and I want to turn them into 1 document by adding them

or data to disk. A lot of people including myself mix those up or used to
anyways. but I love itunes for its simplisity in ripping cds or as apple calls
them importing.

In order to copy between the two markers, you go to your first marker and hit
command-right arrow with quicknav off. This will select the stuff between the
two markers. You could also start at the final marker and hit command-left
arrow. Then you can do whatever you wish with that audio.
