We have a gas furnace with bassboard heating and electric central air.
Our current thermostat has a physical switch that let's you choose heat, cool,
or off.
Does the Nest
m retired and that makes a difference.

Cameron, that is the very reason that we switched from Nest to ecobee. Nest and
Siri do not play well together. The only way to control Nest using Siri is via
Google Assistant. You cannot set up a Nest device in HomeKit.
