Generally, you press VO-command-enter to go into non-contiguous mode and then press it again on the first item. Next, for each item you want to select, press VO-command-enter again. When you have everything, you can check what is selected with VO-F6. Then, you can do what you need to do.

Which version of MacOS are you using? The latest versions have VoiceOVer take control of the caps lock key much like Windows screen readers have done for several years. If double tapping the CapsLock causes it to work then that is what you are encountering. This can be disabled in VoiceOVer
