Fairly easy if you create the USB installer with the Mojave
downloaded from the App store.
You could also create another APFS volume on your current Mac and
install Mohave in that.

Thinking of buying a used or refurbished Mac laptop. Only want to use it to run

No real need to go into Keychain Access for this sort of password. On the
iPhone, go to Settings, Passwords, then double-tap Edit and the password should
be visible. If it does not after double-tapping the Edit button, double-tap on
the bullets and it should open the password for you.
You can do this in Keychain Access on the Mac.
