I move Mail to the beginning of Finder with option-LeftArrow but it doesn't
stay there on the position I leave it. Am I supposed to save this change? I
press Command-S to save the change but I think it does not work.

It may not be you. When I was running Monterey I had a really hard time opening
my email all the time. Of course my computer is older than yours but I think
there might be a problem with email in Monterey at least for some people.
