for replying to an email be structured in MailMate such that selected
text (only) simply by selecting it for use in a reply, then hitting the
reply command to copy only the selected text.

It's a setting in the Composer preferences pane (“Only include selected text”).
It's off by default.

I like what you did with these appearance-related items.
Not sure what’s different on the changed code - newer API for MacOS
10.15+, as it looks like I have the same appearance of the menu window
for attachments on MacOS 12.3.1 as last Test Build (r5890).

It's a setting in the Composer
Yes, I see it now: At the top, with the “Reply:” checkbox was off
(by default). Only include selected text from my clean install. That
setting apparently did not transfer when I reloaded settings after fresh
install of MM or perhaps a more recent upgrade to r5890.
