The larger MityVac kits come with a reservoir and some hosing that
is intended to do just this sort of stuff. Plus it's massively
handy for chasing vacuum lock problems, etc.

messiest and least reliable of the group.

For the past 20 years I've been using a 12 volt fuel pump to evacuate brake
systems.. and hydraulic clutch systems.
A cheap 12 volt pump that produces 4 PSI of pressure will do a very nice
job of pulling old brake fluid out of your system.
