Bernie’s Fine Meats in my former town of Port Washington, WI. You walk in, 
point to what you want, it goes over to the meat saw to be cut to your choice 
of thickness. Summer sausage to die for. Smoked chicken. Always had fresh 
turkey for Thanksgiving, and a quarter beef on the freezer from them. Excellent 
homemade brats and other sausages of your choosing.

John and Jan, the former proprietors, were great people. Forget your checkbook 
or card? The little green ticket got pinned on the wall next to the register 
and you settled up next time you were there.

I pay handsomely to get their yummy stuff shipped overnight via FedEx to 
Florida. It’s worth every penny. To this day my boys will ask, “When’s the next 
box from John and Jan’s coming?”

Which reminds me - I need to place an order...

True artisans are hard to come by.

Speaking of artisans, I found a guy who will sharpen auger bits for a 
brace.   Took all but one of them in, andtook in my ships augers and a 
couple big twist drills.  I am hoping he is a true artisan.   I've not 
found the files to buy to sharpen augers, so I am glad to have someone 
to sharpen them.

 We used to have a fantastic butcher, when you asked for steak he'd ask how you 
were going to cook it. If you said propane you'd be allowed to buy up to about 
$15/lb steak. If it was charcoal it could be up to $17-$19/lb. One time I 
promised (and fulfilled) to cook it over a wood fire and the steak was $22/lb. 
That steak was mind blowing...
I went in I told him I wanted a 1# steak that was 3" thick. He asked how done I 
was going to make it and I said "medium rare." He said "Your wife will want 
hers medium right?" I nodded, "I'll cut hers 2.5" thick, cook them the same 
time, hers will be medium."Dude was an artist. Sadly he's gone to the big shop 
in the sky, the guy who took over was a "meat cutter" and the shop closed 
within 6 months.

 If you haven't tried grass fed beef you should, the taste is noticeably more, 
I dunno, "beefy" I guess.
You've probably had grass fed beef and just didn't know why the steak was more 
flavorful.
In general the only "downside" of grass fed is that it'll have more irregular 
marbling. Sometimes more, sometimes less, no matter which it'll be more 
flavorful.
I'm actually starting to look around for a local farmer to sell me a quarter 
beef. We've got a big freezer and the last of the moose meat is about gone. 
With no more moose on the horizon (season is next week, no permit) I'm thinking 
local grass fed beef is a good alternative.
Although I did get a doe permit in MA this year. I suspect the group I hunted 
with last year will be extra friendly this fall...

produce store carries it and had NY cuts on sale last week for a reasonable
