John and Jan, the former proprietors, were great people. Forget your checkbook or card? The little green ticket got pinned on the wall next to the register and you settled up next time you were there. I pay handsomely to get their yummy stuff shipped overnight via FedEx to Florida. It’s worth every penny. We used to have a fantastic butcher, when you asked for steak he'd ask how you were going to cook it. If you said propane you'd be allowed to buy up to about $15/lb steak. If it was charcoal it could be up to $17-$19/lb. One time I promised (and fulfilled) to cook it over a wood fire and the steak was $22/lb. That steak was mind blowing... I went in I told him I wanted a 1# steak that was 3" thick. He asked how done I was going to make it and I said "medium rare." He said "Your wife will want hers medium right?" I nodded, "I'll cut hers 2.5" thick, cook them the same time, hers will be medium."Dude was an artist. If you haven't tried grass fed beef you should, the taste is noticeably more, I dunno, "beefy" I guess. You've probably had grass fed beef and just didn't know why the steak was more flavorful. In general the only "downside" of grass fed is that it'll have more irregular marbling. Sometimes more, sometimes less, no matter which it'll be more flavorful. I'm actually starting to look around for a local farmer to sell me a quarter beef. We've got a big freezer and the last of the moose meat is about gone. With no more moose on the horizon (season is next week, no permit) I'm thinking local grass fed beef is a good alternative. Although I did get a doe permit in MA this year.
