Hi. Yes, CDEX can rip CD tracks separately (this is the default behaviour) and it can keep tracks together (which you have to select from a menu). As for CDs, none of the programs you mention will do DVD ripping, to the best of my knowledge. What would you like to do with DVDs? Rip
