To achieve the results you require, follow these steps:
1. Open MP3Tag.
2. Open the File Export... dialog (control-E).
3. Tab to the New button and activate it.
4. Type a name for your new export configuration and click OK.
5. The new configuration file should open in your default text

I'm using Window-Eyes v7.5.
Because of David's earlier comment, I found where there is a WE app
called Change Sound Card which refers to using Eloquence with a
bluetooth headset. I tried looking further into it but haven't found
anything so far.
