I am finding some programs that only seem to be available in MKV, and I'm
pretty sure Replay Converter doesn't support this format. Is there anything
out there that is accessible and that will take the video off files with an MKV
extension?

Hi, you can try burnaware or cd burner xp. They free and accessible.
BurnAware also have a paid version.

Ah cool man! Thanks. I've seen this recorder, it's really interesting. I
just didn't get it cause it only does DVD quality. At the time, I wanted the
LS-7 recorder. It does Blu-ray quality which is 96 KHZ 24 birt.
