Some people still can do it, but no one knows why. The sure way to do
it is with Soundtaxi. Use Soundtaxi to convert the files to .wav
format and then use Goldwave to do anything else.

I'm trying to get to grips with Adobe Audition3, but am having problems
trying to remove a vocal track from an mp3 file.
This particular software doesn't seem to be very accessible to speech
readers.

It makes no difference which program you use the best you will be able to do
is push the vocals farther back but the only way to fully remove them is to
have the original tracks so you could cut out that track alone. An mp3 is
already mixed down thus every track is blended.

It is called, Switch Audio File Converter.
