I am using nuc at work with both Cents and Linux Mint. Not an issue at all. I can confirm linux installs without issue on Intel based NUCs. Much support for most popular linux flavors. I have i5 Skylake version (i5-6200U I believe) it works great with kernel 4.4 or greater. It is "fast/slow" as you would expect from equivalent laptop.
