I can confirm linux installs without issue on Intel based NUCs. Much support 
for most popular linux flavors. 
Also, you can use HDMI to DVI and or mini DisplayPort to HDMI adapters/dongles 
so you can save costs and keep the same displays.

looks like the NUCs are HDMI only and his displays are VGA/DVI, iirc.

I have i5 Skylake version (i5-6200U I believe) it works great with kernel
4.4 or greater. It is "fast/slow" as you would expect from equivalent
laptop.
