The central meridian in each utm zone is oriented directly at true north (Easting of 500,000 m).  The difference in angles when you move east of west of the meridian is referred to as convergence and the following link provides 2 formulas for calculating the convergence angles in utm

You can use the Mercator projection to digitize true north lines. It is conformal and thus preserves angles. The meridian convergence is 0 (that is, true north == grid north) all over the map. If you then transform those lines to your chosen CRS you should have a set of lines pointing towards

Hi Nyall, I also think that the current situation where the page properties are only exposed on right-click is not so ideal. From your two options you list I would prefer option 1 with the separate "pages" panel. I don't think that wizards are so effective - definitely not for experienced users.
