Any idea how I’d get to it? All I see are pipes under my bonnet! Would in be in
the same place as the standard fiesta? And it’s just the two connectors at the
top of the matrix and that’s it? Thanks.

My guess would be your heater matrix is leaking. Last time this happen on
my saloon I was able to source a replacement from Mister Auto, but other
sources may be available.
When you open the plastic heater unit to extract the matrix the plastic
clips will break. Ford produced some metal
Is this correct? https://www.ebay.co.uk/itm/162550137065
And is it okay to keep driving as long as I keep the fluids up?

Picture 3 shows the pipes at the right and a clip just to the left of them.
That whole heater unit is a good price, but you only need the matrix,
which is essentially a small radiator. I would expect the matrix in that
one might be old, so worth getting a new one too.
The matrix is similar to
If it is the matrix, try and find a genuine Ford one with Aluminium fins
and plastic pipes and end caps.
The pattern ones tend to be copper fins and pipes, don't fit very well
and seem to produce far less heat than the Ford ones.

Not sure if it's just a thing with Thunderbird but it's only started

The Mk1 I saw on eBay had curved pipes, so maybe that is the difference?

Unfortunately you won't know what you've got until you take it out. As an
alternative/short term fix you can disconnect the two hoses that got into it
(from the engine bay) and connect them together using a short length of 15mm
I think its a Thunderbird 'feature'. My mobile email client is OK.

If it's only a small leak, yes.
What happens usually is that the water collects in the lower heater
cover so watch out when you remove it.
You will also find that if the weather gets colder that the windscreen
will mist up if you try and use the fan.

Yes, agree, heater matrix, or if the pipes aren't sealed very well in
the engine bay it could one one of the hose connections to the heater.
At least it can be changed from inside the car without removing the dash.
I don't actually know the part number for the metal clips as I've always
