Hey Max, I saw the video where Russ announced this, and was also curious as I've got an 11sp Cassette in my parts bin with no current home. I do think you need an 11sp chain, as the chain width and cassette spacing work most natively together. You may be able to get away with a 10sp chain

Things have been covered in great detail really not much to add other than a +1 vote for Soma Cazaderos. Bit of a knob, solid centre line and rolls a bit nicer than gravelkings. All the boutique tyre brands are made by Panaracer anyway so let healthy scepticism lead your decision making.
