I remember this process for the Clem, which went the opposite direction. Originally it was supposed to come in a flat black you could bang around on commutes, then touch up with a spray can. I believe the decals were going to be stick-on and come in a baggy so you could leave them off.

Yes, a Platy should be on the lighter side, remember it's derived from the Cheviot which was kind of a droptube Hillborne road bike with road brakes. Grant changed the brakes and a couple frame details, but it still should be closer to Hillborne and Homer than the touring/fire roads category

I've owned both and can't say there's a definitive "one is better" answer for you. The Appa may theoretically be stiffer on a trail but that's not necessarily a benefit on a non-suspended bike. It's probably a little lighter than Clem, and it's a more expensive full-lugs frame so there's that.
