I can't speak to a Joe or AHH, I'm sure both would be great choices, but
for me, the Sam has been a blast to ride on just about everything except
hiking trails. A big difference between the Sam and the AHH is canti-posts.

Super interesting to see this new single (double?) speed! This past fall, I
finally had the funds to get my SimpleOne built up for riding here in hilly
western mass. Here's a link to some images post by my LBS, they put
together the bar, stem, brake, and fenders (they also built the wheelset).
Right, looking at the links you started out with, this seems a fairly close
match:
https://www.outdoorresearch.com/us/papyrus-brim-sun-hat-243408?cat=124,24,6,402
Can't say I have any experience with that hat, but, I've never had an issue
with any OR products.
$36 fairly inexpensive.
On
Ex Officio and Outdoor Research make great sun-protective clothing, I've
used Ex Officio for extended trips throughout India, holds up well and
keeps the sun off. Kava also offers sun hat solutions, a bit goofy but
solid.

Just had a pair of the V/O 52mm Zepplin fenders installed on my SimpleOne
over top of 42mm Compass Hurricane Pass tires. The clearance kinda seems
about the same +/– compared to my Sam thats running 43mm BG R'n R's.
Clearance is pretty good, you'll def. hear and feel peddles on rougher
roads.
Here's a fairly simple solution for the *dropout* from V/O, which helps to
create a nice round fender line.

Anyone ever use a Canti brake up front and V-brake in the back? I know I'd
need different pull levers, which complicates things, but I've noticed up
front, the V-brake can sometimes be a little more than I need, it's great

Personally, I'd get the XO-2, seem's to have more of the "fun" baked into

Not sure what the world has to offer in regards to 26" tires these days,
something to consider.
IMO, save the $$$ and get a Cygolite, a rim brake

I have a 56 SO. Maybe consider the height of the tires you plan to use,
currently I have 43 Compass Hurricane Ridge, fairly tall. I'm like 5'11"
give or take, 84 pbh, I think a 58 would be too large for me, the 56 fits
well, I guess a 58 could work, bit, it's nice having stand over space
