I ride with a Sackville Shopsack a lot. You can put shitloads in it and it expands well. I keep double d-rings on it so it stays in well when being ridden on decent roads and then I use a bungee net when I'm going to be riding dirt. It's VERY expandable and secure. Maybe worth a look for
