cog per week or something and then move the chain to the next hardest cog for a
week and back-and-forth like that between a few cogs, IIRC.

As Bill says, there is no magic answer to “trying to get ways for more speed,”
but may I suggest the opposite approach? Fewer gears. Ride single speed. You
will gain strength and power. Do it on your Rodeo, as it is now. Pick a gear
and do not shift it out of that gear. Ride till you can’t,
