Hugs, Janet FATHER'S DAY CAKE Honey Bun Spice Cake 1 (18.25 ounce) package spice cake mix 3/4 cup melted butter 4 eggs 1 (8 ounce) container sour cream 1 cup brown sugar 1 tablespoon ground cinnamon 2 cups confectioners' sugar 4 tablespoons milk 1 tablespoon vanilla extract Preheat oven to 325 degrees F (165 degrees C). In a large mixing bowl, combine cake mix, butter, eggs and sour cream. Stir by hand approximately 50 strokes, or until most large lumps are gone. Pour half of the batter into a 9 x 13-inch metal baking pan sprayed with cooking spray. Combine the brown sugar and cinnamon, and sprinkle over the batter in the cake pan. Spoon the other half of the batter into the cake pan, covering the brown sugar and cinnamon. Swirl the cake with a butter knife or icing knife until it looks like a honey bun. Bake for 40 minutes, or until a wooden pick inserted into the center of the cake comes out clean. Frost cake while it is still fairly hot. Serve warm. BREAKFAST BREAD PUDDING WITH BERRY SAUCE BREAD PUDDING: 2 eggs 3/4 c. sugar 3 c. low-fat milk 1 c. heavy cream 1/2 c. unsalted butter, melted 1 tbsp. vanilla 3/4 c. dried currants 1 tsp. nutmeg 8 oz. stale French bread, sliced 1/2 inch thick WARM BERRY SAUCE: 2 c. frozen raspberries 2 c. frozen strawberries 1/3 c. sugar 1/3 c. fresh squeezed orange juice 3 tbsp. fresh squeezed lemon juice Powdered sugar for dusting Raspberries strawberries for garnish PUDDING: Combine eggs, sugar, milk, cream, melted butter, vanilla, currants and nutmeg in a bowl; whisk to blend well. Pour the mixture over bread slices and let stand, turning bread as necessary, until bread is soft and saturated, about 20 minutes. Preheat oven to 350 degrees. Arrange the bread slices in a lightly greased 4-quart baking dish and pour any unabsorbed custard mixture over the bread. Bake uncovered until the custard is set and top is lightly browned, about 45 minutes. SAUCE: Combine berries, sugar and orange and lemon juices in a saucepan over medium heat. Cook, stirring constantly until the fruit begins to break up, about 5 minutes. Puree in a food processor or blender, return to same pan and heat until warm. To serve, dust the top with powdered sugar. Pass the warm sauce and fresh berries at the table. Serves 8. Decide if you want it plain or with nuts, peanut butter, caramel, white chocolate, Rice Krispies, etc. 3. Melt enough Hershey's chocolate bars to make your kiss in a double boiler being careful not to scorch it. 4. Plug end of funnel with a mini marshmallow and rest it in a sturdy cup (coffee cup is great). 5. Add fillers, if desired, to melted chocolate and pour into funnel. Tap the funnel gently to make sure no air is trapped. 6. Cool at room temperature for several hours. Tap funnel and the kiss will slide out. Wrap in aluminum foil and tie with ribbon. IMPOSSIBLE TURKEY PIE 2 cups cooked turkey cut up or cooked chicken 4 1/2 ounces sliced mushrooms drained 1/2 cup sliced green onions 1/2 teaspoon salt 1 cup shredded Swiss cheese 1 1/2 cups milk 3/4 cup bisquick. Baking mix 3 eggs Heat oven to 400 degrees. Lightly grease pie plate, 10x1 1/2-inches. Sprinkle turkey, mushrooms, onions, salt and cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 30 to 35 minutes. Let stand 5 minutes before cutting. Refrigerate any remaining pie. Cook and stir onions and celery in butter until onions are tender, about 8 minutes. Stir in water, half-and-half, cheese spread, instant bouillon and nutmeg. Heat to boiling over medium heat, stirring constantly; stir in wine. Heat to boiling. Boil and stir 1 minute. Sprinkle each serving with paprika and garnish with croutons. Mix flour, baking powder, salt, nutmeg, and 3/4 cup sugar. Beat in milk, egg, melted butter, and vanilla. Spread over berries. Mix 1 cup sugar with cornstarch and sprinkle over batter. Pour boiling water over all. Bake at 350 degrees for 40 - 50 minutes. Toss bread crumbs with melted butter and sprinkle over top of cheese. Bake, uncovered, 30 to 35 minutes or until tomatoes are tender. Serves 6.
