It makes a more filling soup when served with croutons.? If you are growing a garden, this is a great way to use some of the surplus! 1 medium slicing cucumber, cut into chunks 1 clove garlic, cut into smaller pieces 1 medium-large red bell pepper (can substitute other colors, but red works best for color) 1/2 medium onion, cut into chunks 1 medium-large tomato, cut into chunks 8 oz. can tomato sauce 3 Tbsp. extra virgin olive oil, optional 3 Tbsp. vinegar salt & pepper to taste cilantro, optional Put the cucumber in a food processor and process until finely chopped; add the garlic, bell pepper and onion and process all until finely chopped.? Add the rest of the ingredients and process until you have a thick, textured cold soup.? Serve right away if desired, or serve 1-2 days later.? It's delicious either way. ?
