Seems like I'm missing the Reverse DNS entry for my IP address as well as
SPF and DKIM configuration for my domain

Generating the keystore was simple,
I did open https://github.com/apache/james-project/pull/804 to quickly
fix it...

Just an update from the Kopano community :
Kopano Gateway is an IMAP/POP3 Server, it does not listen to another
IMAP/POP3 Server. You cannot use Apache James as IMAP/POP3 for Kopano. Only
Kopano-Gateway can be IMAP/POP3 for Kopano.
As you can see below[1], Kopano depends on Postfix
